THE PRODUCER

Ipanema Coffee is a very well established coffee producer in the Mantiquiera Mountains of Sul de Minas, with fertile soil and consistent rainfall. Their team worked for a number of years to test the potential for very innovative, high scoring specialty coffee from Ipanema’s very own Rio Verde farm. It involved agronomy, science, dividing the land into small “glebes” so that each micro-lot would be fully traceable, planted with Brazil’s best performing Arabica varietals (Yellow Bourbon, Yellow Catuai and Red Acaia) and pushing the boundaries of processing techniques to improve complexity and flavour. CREATIVE COFFEES FROM
PROGRESSIVE PRODUCERS.

The Yellow Bourbon coffee cherry has been anaerobically fermented for 90 hours, before both patio drying and time in the vertical dryers. This micro-lot (B64 Blackcurrant “Blue”) displays the winey, fruity character of an anaerobic process, with balanced citric acidity and a creamy body and texture that’s testament to good drying. Lots are also designated as either “Black”, “Gold” or “Blue” (the best of the best) based on their individual score, rarity and complexity. This coffee is a Blue batch. We will usually have a couple of blue lots each season and often find ourselves drawn to those with winey, or sweet and fruity characteristics.

Please note we only hold limited stock of these products, but we aim to roast at least two times a week (T&Cs apply)

How to brew


We normally lean toward filter brewing for the producer series as the method highlights the more complex and delicate flavours in lighter roasted coffee. As always, we default to the industry standard of 60g of coffee per litre of water as a starting point.

For espresso try a 1:2.5 brew ratio and shot times of around 24-30 seconds.

Tasting notes


This superb Blue Edition coffee lot is part of the Premier Cru collection, from Ipanema’s Grano Perfetto season (2025-2026). Blackcurrant, berry and chocolate notes, with a creamy texture and a juicy, citric acidity. A coffee that we believe is great for both espresso and for soft brew, the syrupy body and fruity flavour are perfectly matched and complimented by a winey finish.
