THE PRODUCER

Based in Sozoranga in the Loja region, Finca Chorora is a highland farm surrounded by epic cloud forests. Sisters Olinka and Diana focus on modern varietals of arabica combined with experimental processing. Sidra itself is a sweet, floral arabica varietal that was developed in northern Ecuador and understood to be an adaption of an Ethiopian landrace (heirloom) growing in Ecuadorian soils. But in the last few years it has continued to develop a reputation for cup quality.

CITY

BRIGHT, MODERN,
FRUIT-FORWARD FLAVOURS.

This particular coffee is a sweet, 100% Sidra arabica with an anaerobic fermentation. For this coffee, the cherries were harvested and spent 72 hours in sealed tanks with isolated yeasts before being pulped and undergoing an additional 72 hour anaerobic fermentation. The coffee is then sun-dried within its sweet, sticky mucilage.

How to brew


We normally lean toward filter brewing for the producer series as the method highlights the more complex and delicate flavours in lighter roasted coffee. As always, we default to the industry standard of 60g of coffee per litre of water as a starting point.

Tasting notes


Toffee and gentle floral aromatics, with apricot, panela sugar and zingy, citrus flavours. We’ve thoroughly enjoyed the coffees from the Chorora estate over the past few years, showcasing the character of these unique, rare varietals but not being heavy handed with the processing. A bright, invigorating filter coffee with an aromatic nose and a beautifully sweet finish.
