San Agustin Estate is located next to the ruins of an ancient civilisation who lived in Tulipe over 600 year ago. The farm, situated at 1700m, is owned by Alfonso Villagomez, a former environmental consultant who is very methodical in the production of coffee. The hacienda has belonged to Alfonso’s family for 3 generations but only started producing coffee in 2014 on Alfonso’s initiative. The farm produces Typica Mejorado, Sidra, Pacamara and Ethiopian Heirloom, with flavour profiles that are usually very sweet and fruity.

CREATIVE COFFEES FROM
PROGRESSIVE PRODUCERS.
The freshly harvested, ripe coffee cherries arrive at the farm’s processing facilities to be rinsed, sorted and floated. The cherries are then placed in sealed tanks for 48 hours or until pH reaches the 3.5-3.6 range, then it’s taken to the oreadores (slow drying chambers) for 21 to 28 days. After reaching optimal humidity range (9-11%) the coffee is moved for stabilising in optimal storage conditions in Quito until milled.
The results from the processing are complexity and clarity in aroma and flavour. San Agustin is the only farm that can offer natural processed coffees as the area is very humid and has a high annual rainfall. Alfonso’s trick is to dry the cherries in solar and gas powered drying chambers (oreadores), where the heat and humidity can be precisely controlled..

How to brew
We normally lean toward filter brewing for the producer series as the method highlights the more complex and delicate flavours in lighter roasted coffee. As always, we default to the industry standard of 60g of coffee per litre of water as a starting point.
