Santa Clara is a beautiful, diverse farm, situated on the volcanic slopes near the UNESCO recognised town of Antigua. Run by the Zalaya family for almost a century, the farm is now under the leadership of Ricardo Zelaya and grows a range of varietals from Bourbon to Gesha. Unusually for Guetemala, Santa Clara operates a complete processing facility, with their own on-site wet and dry mill.

Pacamara arabica thrives in volcanic soils at high altitude, developing a large and dense coffee bean that requires careful roasting. At Santa Clara the ripe cherries are hand selected, fully washed and sun-dried and we love the complex, chocolatey and zesty profile this coffee delivers.
Please note we only hold limited stock of these products, but we aim to roast at least two times a week (T&Cs apply)
How to brew
We normally lean toward filter brewing for the producer series as the method highlights the more complex and delicate flavours in lighter roasted coffee. As always, we default to the industry standard of 60g of coffee per litre of water as a starting point.
