A new coffee to our producer series here at Dark Woods, Honduras Abeja Honey is a mixed varietal made up of Catuai, Caturra and Icatu. This honey process coffee is sweet, delicate and super juicy, with a crisp grapefruit finish.

Cafes Capucas was founded in 1999 and takes its name from the local village Las Capucas, it is located in the hills above Santa Rosa de Copan, situated 1500m above sea level. Santa Rosa is one of the main coffee growing areas in Honduras and general manager Jose Omar Rodriguez and his team do a fantastic job. This lot is part of the Abeja bee / honey project which encourages bees to pollinate the coffee trees as well as local banana, plum and other tropical plants found on this incredibly biodiverse farm and we think gives this contributes to its beautiful sweet and tropical finish. 

The farmers also have an opportunity to sell the honey locally. As coffee is seasonal this allows them some extra income when it’s not harvest season.  Leon our coffee roaster was lucky enough to visit and source this coffee at Capucas and loved the project and the community:  ‘I was even able to try some fresh honeycomb from the bees and it was absolutely delicious’.

This coffee has been dried for 20 days and is done at COCAFCAL one of the local cooperatives in the area.  Expect notes of Panela (sugar cane) plum, caramel and stewed fruits.

Available via our Open Day, this Saturday 20th July and online from Monday 22nd July.
